I don’t know about you guys, but I like to eat “pretty” food. Eating healthy when I was in high school and college wasn’t really a priority for me. I ate mostly like a child-think PB&J’s, chicken nuggets, mac and cheese and anything that your 2 year old niece would eat. I’ve only jumped on the health wagon a few years ago and it’s tough at times but rewarding. That’s not to say I don’t enjoy a doughnut or pizza but I know eating only these foods will make me feel like crap and my face breaks out. I also decided to cut down on my dairy due to a lot of stomach issues and it has helped me function a lot better and the husband thinks I should never have any type of dairy (thanks babe).
I decided to share my super easy dairy free smoothie bowl recipe with you all!
I like to keep frozen fruit just because it’s easier and cheaper when the fruit you want isn’t in season. For this particular smoothie I used:
-1 Cup Frozen Berries
-1 Cup Frozen Pineapple
-1 Cup Spinach
-Coconut Milk (about 2 cups)
Here’s how to make it:
1. Blend all the ingredients listed above together
2. Place in a bowl
3. Spread toppings of your choosing over top
(I chose bananas, chia seeds, dried cranberries and cashews)
