Whole30 Spicy Zoodle Pork Recipe

It’s Sunday and Alex and I are officially on day 19 of the whole30 and we are still alive-who would have thought? You can read about our first few days and what’s involved in the Whole30 diet. We decided to try and hike Pike’s Peak yesterday, which we’ve both done before and we thought it was going to be super easy because we’ve been working out a lot and eating so healthy. Well, we were SO WRONG. The hardest part was that we were both so sore from our workouts the few days leading up to it. I originally was under the impression that after our muscles warmed up it wouldn’t be so sore and painful. Big Mistake Katelyn.

We also believe that our bodies are use to using carbs and sugars, especially on a 13 mile hike up a mountain that there just literally wasn’t enough energy for our bodies to sustain. Anyways we made it to Barr Camp (half way) and headed back down with blisters and sore bodies. To be fair it was still a 13 mile hike for a Saturday, not so bad.

Besides the failed hike attempt we are both feeling really good now eating this way. I’ve trying to incorporate more veggies into my diet now that I have gotten the hang of the whole30, so when I found these pre-made zucchini noodles at Natural Grocers I almost cried with excitement. We’ve been making really easy recipes and prepping everything the week before. Lots of potatoes and meat and so many eggs for breakfast. In fact, we went through 60 eggs in 2 weeks. Like I said so many eggs. This recipe is super easy and you only need 3 ingredients! I get this pulled pork from Costco and the zoodles are from Veggie Noodle Co.

Here’s what to do for an easy healthy lunch or dinner:

1. Pre-Cook the Pulled pork

2. Once it’s cooked, toss it in a small frying pan with olive oil

3. Once the pulled pork is heated, add the zoodles and some red pepper flakes

4. Cook about 4-6 minutes all together, add more spice if you want, and ENJOY!

I know, you’re thinking why would you even make a blog post about this recipe? Well, because it’s so delicious I need to share it with the world. Speaking of sharing with the world, we have eaten so much watermelon I needed to find a better way to cut it. I found this on pinterest and it has given me hours of my life back.
